Jodhpuri Pyaaz Kachori

Kachori are normally stuffed with dal Pithi, which is made from urad dal lentil, ginger, chili and some spices. These days various variants are made like “Pyaaz Kachori”, “Peas Kachori” and even sweet version “mava kachori”.

Today we are presenting recipe for Pyaaz Kachori which is popular from Jodhpur region of Rajasthan.

Ingredients – Special Masala
▪️Jeera – 1 tbsp
▪️Saunf – 1 tbsp
▪️Coriander Seeds – 1 tbsp
Dry roast on slow heat till these spices are light brown and then grind coarse.

Ingredients – Kachori Stuffing
▪️Chopped Onions – 4 Nos
▪️Potato boiled – 3-4 Nos
▪️Ginger grated – 1 inch
▪️Green Chili – 3-4 Nos chopped
▪️Besan – 3 tbsp
▪️Coriander Leaves – Small bunch chopped
▪️Asafoetida / Hing – 1 tsp
▪️Dry Mango / Amchur Powder – 1 tsp
▪️Red Chili Powder – 1 tsp / as per taste
▪️Turmeric Powder – 1 tsp
▪️Sugar – 1 tsp
▪️Garam Masala – 1 tsp
▪️Salt – as per taste
▪️Special Masala Powder – 1 tbsp
▪️Salt – as per taste
▪️Oil – 3 tbsp

Method
▪️Heat the oil in a pan and temper with special masala powder and asafoetida. Now add grated ginger and chopped green chilies and fry for a minute before adding chopped onions. Add salt at this stage so that onions fry faster. You don’t want to brown the onions but should be like translucent.
▪️Add besan, turmeric and red chili powder and fry on low heat. Besan would absorb the moisture if any. Keep frying on low heat for 2-3 minutes so that besan is nicely cooked.
▪️Now add mashed boiled potatoes and mix. Add amchur powder, garam masala, sugar and fresh coriander and continue frying this mix for about 2 minutes. Check seasoning to adjust salt. Stuffing is ready.
▪️Make Lemon sized balls of stuffing which we will stuff in Kachoris.

Ingredients – Kachori Dough
▪️Maida – 2 cups
▪️Ajwain – 1 tsp
▪️Oil – 1/4 cup for kneading
▪️Salt – 1 tsp / as per taste

Method – Kachori Dough
▪️Add ajwain and salt to maida and then add oil and rub nicely the mix so that everything is evenly mixed. If you take some mix in hand it should be able to hold, else add some more oil.
▪️Add water little at a time to knead the mix. You have to make a soft dough. Let it rest for 15-20 minutes.

Method – Making Kachori
▪️Take lemon size portion of dough and flatten with hands, with sides thinner than center. Flatten to the size of medium size Puri. Now place masala balls prepared earlier and close neatly to seal. After closing flatten little.
▪Deep fry these kachoris on low medium heat so that it cooks nice and crisp. Each batch may take 15 minutes to fry.

Serve the Kachoris with some chutney of your choice.
